If you download the YouTube app you won't be asked to sign in. But it is just to make sure nobody under 17 is watching explicit content to avoid legal issues.

Well YouTube wants a safe appropriate environment so a little kid doesn't accidentally click on porn. I do understand that there is also plenty of cursing that could be accessed.

Youtube isn't trying to compete with porn. The idea is just as it seams, to verify the users age. The verification is for the same reason that age verification exists in the first place. It's for parents to feel comfortable allowing their kids to use the site.
