I was rewiring my setup to clean up the cables and to get them out of sight almost are wrapped into bundles and stuck between my desk and wall is this safe

Keep data cables separated from AC power cables.

Safe enough; but you might separate your power cables and signal cables. (Two smaller bundles, rather than one big one.)

Get some Velcro ties at you nearest home center.

Realistically, no. It doesn't matter. But to be pedantic – always bundle power with power, data with data. Also high power draw lines should be separate from low voltage lines. I really doubt any of this applies to your living situation.

yes, it's totally safe, aslong as you didn't bend the cables or wrap them too tight which could damage the metal wires inside the cables.

make sure that if you have any power bricks/adapters, that you don't put the cables on top of them, because it might cause them to overheat.
