My home wifi is currently very slow, which means video streaming is out. Doing an interview at Starbucks is also not very professional, not to mention inconsiderate. Any ideas on how I can do this?

Even with GOOD WiFi, do NOT Skype over WiFi. Always use Ethernet. This comes from the vast vast experience at TWIT.TV. They LIVE on Skype and have found this to be true.

You can tell the interviewer about your wifi situation and ask for suggestions. Depending on what you are interviewing for, you might be able to do it via audio only, or arrange an interview in person.

Find somewhere that has better wifi and/or internet access that isn't public, like a friend's house for example.

Go to the local public or college library or try to schedule for dead times or go to a Dinkins and sit in your car and hook to the Wi-Fi
